What is the #MiMenuPlan all about?
We usually feature a round up of recipes from food bloggers around the web but this week we’re featuring five delicious and healthy meals that call for a special ingredient, soy bean oil. The recipes below can be found on a very helpful and informative site on health and nutrition called www.soyconnection.com brought to you by the United Soybean Board.

What is Soybean Oil?
An all-natural oil extracted from whole soybeans, soybean oil accounts for about 65% of vegetable oil used in commercial and consumer cooking. Soybean oil’s light, golden appearance and neutral flavor make it an ideal ingredient for many types of cooking.
Most “vegetable oil” is actually soybean oil – just check the ingredients listed on the product label to be sure.

Monday – Mondays set the tone for the week, so why not start it with a bang?! Best way to incorporate energy is through protein packed foods. This Black Soybean Salad recipe goes perfectly with a side of warmed tortillas or brown rice.
Tuesday – Hooray for Taco Tuesdays! My family loves tacos. My kiddo loves to assemble them and add a little more of this or that. I know you’ll love this Crispy Fish Tacos With Kimchi recipe. Its tangy, crispy, filling and delish!
Wednesday – Getting over the hump of the week deserves a celebration! Don’t you agree? Celebrate with this Southwestern Pork Tenderloin with Soy Succotash recipe. It’s light and full of flavor. The pork loin rub alone will have your mouth watering.
Thursday – I love making pasta. It’s quick, easy and if you pick the right ingredients, your pasta dish will burst with flavor. This bold recipe will make you want a second helping! Try the Linguini with Roasted Garlic-Wine recipe this Thursday.
Friday – Kisk-start the fun weekend with this recipe. Not only is this Tortilla Bake recipe easy to prepare and takes 30 minutes to bake, it can be paired alongside a nice cocktail. Cheers to the weekend!
