What is the #MiMenuPlan all about?
I’m fortunate to be surrounded by some amazing food bloggers. To give back to them for all the incredible work they do, I created a menu plan to satisfy our craving for good, healthy food while making these fantastic recipes part of your family’s meal time. Before you click away at the recipes, please feel free to show these amazing chefs and food bloggers love by commenting or sharing the recipes on their sites. 🙂 To help you get a sense of how I choose the recipes I do, I always keep in mind the following when deciding on a recipe to make at home:

- Easy to moderate skill level
This week is extra special because it’s my hubby”s birthday!!! Yay!!! Being that I’m such a good wife, I will make him something he truly adores, chicken parmesan! But since chicken parmesan is a little time consuming, a stove-top version of this recipe makes everyone happy.
Monday – Mondays aren’t always my favorite day of the week but this Monday is different. In honor of the holiday, Labor Day, how about some burgers? These aren’t the kind that are frozen. These aren’t even beef burgers. Southwest turkey burgers will make everyone’s mouth water and senses come to life. With ingredients like fresh cilantro, spicy chipotle and creamy avocado to top it off, I’m sure your family will be asking for seconds. You can make the patties up to 8 hours ahead of time too.
Tuesday – Taco Tuesday will be amazing thanks to these Bento Box Taquitos! I think these would be great for lunch or dinner. 🙂 Being that it’s back to school week, why not make a batch of these for your child to take with them to school?
Wednesday – It’s the middle of the week and you should certainly celebrate it with this dish. Shrimp ceviche is always nice to have especially on Wednesday (hump day). I love the fact that you get to serve this shrimp ceviche right in the avocado shell! Isn’t that neat?
Thursday – In honor of my hubby’s birthday week, this stove top chicken parmesan recipe is perfect! It’s easy and delicious. A simple green salad and some garlic bread goes well alongside this dish. I usually pick some garlic knots up from the pizzeria nearby to cut back on cook time.
Friday – It’s the end of the week and you don’t want to spend too much time in the kitchen so this recipe is perfect. It’s fun and easy to prepare. I was about 12 or 13 years old when I first had pupusas. They were warm and filled with beans. Pupusas are native to El Salvador. Although they can be filled with meat, beans or fish, this pupusa recipe calls for cheese! You’ll eat these and want to make them again!
