Saturday’s are the usually the day my family and I go grocery shopping. Yes, it’s a family affair! LOL
Food shopping is something I love to do when I’m prepared to do it. Last night was one of those nights I wasn’t very prepared. This past week was a pretty hectic work week. A busy week leaves little time for me to plan meals for the following week. You see, planning makes everything in my busy life run smoothly. Not everything goes according to plan all the time but when it does, it’s priceless.
So….. as I sat on my couch as my little one and hubby waited for me to get up and go, I came up with a wonderful idea!
Since I’m always working on the blog, why don’t I blog a list of simple and delicious meals to help us BOTH plan out our grocery lists and meals for the week? I’d call it my menu plan, hence the hashtag is called #MiMenuPlan.

So without further ado, here are this week’s recommendations:
Monday – You can learn to love Mondays with this sweet and sour recipe. Sweet and sour foiled chicken wings, baked french fries with a side of no-mayo cole slaw can turn any dreadful Monday into a great one!
Tuesday – Both my hubby and daughter are picky eaters so when I cook fish, I go for mild flavors. Tilapia works perfect for us. Bring in the first Taco Tuesday with these delicious Tilapia tacos with mango salsa.
Wednesday – Baked empanadas are a hit in our house. They’re like little pieces of heaven. You can fill them with almost anything. My daughter loves to help out when I make them so make room for your little one to assist you in this dish. Serve the empanadas with this gourmet avocado and edemame salad.
Thursday – Cheddar corn chowder is perfect because its creamy and smoky plus it has cheddar. I love every bit of it. My daughter adores it too.
Friday – Pastelon is a very special dish in my home and you can also serve this as a brunch menu item if you choose not to cook on Friday night. Since pastelon is a heavy dish, I’d serve it alongside a fresh green salad.
