This time of year comes around and everyone is singing… “Llegaron Las Navidades” which means the holidays are here. Although it’s scary how time flies with the end of the year approaching, I’m receiving it with open arms and an open appetite. I love the holidays because I am surrounded by dishes that are cultural and delicious.
Having an alcapurria is pure happiness for me. Crispy on the outside with a soft center filled with picadillo (seasoned meat) send your tastebuds to texture heaven. It is sure to satisfy
but you’ll always want a little more. Alcapurrias originate on the island of Puerto Rico. They’re simply a fritter made up of a doughy masa (mixture). The masa is made of mashed root vegetables. Tubers, potatoes, yuca, or yautia can be found in the masa depending on who’s preparing it.
