Here are some really yummy recipes I found in the Cinch! plan:
Vanilla Almond Frozen Banana
Produce: 1 mini (five-inch) banana, peeled but not sliced
Whole grain: 1/4 cup whole oats
Lean protein: 6 ounces nondairy “yogurt”
Plant based fat: 2 tablespoons peanut, chopped
SASS: 1 small fresh vanilla bean or 1 teaspoon pure vanilla extract Mix the peanuts and oats together and set aside.
Fold the vanilla extract or contents from inside bean into the yogurt. Dip the banana into the yogurt or spoon the yogurt over the banana to coat it thoroughly. Sprinkle with the nut mixture, wrap in wax paper, and freeze at least twenty minutes.
Berry Almond French Toast
Produce: 1 cup raspberries, fresh, or frozen and thawed
Whole grain: 1 slice whole-grain bread
Lean protein: 1/2 cup organic egg whites, or 1 whole organic egg and 2 egg whites
Plant-based fat: 2 tablespoons silvered almonds
SASS: Dash each ground cinnamon, ground nutmeg, and ground cloves
Soak the bread in the eggs. Spray a pan with nonstick cooking spray. Place the soaked bread into the pan, pour excess egg over top of bread, and cook on the stove top, flipping until each side is golden brown. Transfer the bread to a plate, dust with the spices, and top with the berries and almonds.
Chicken Satay Pita
Produce: 3 or 4 romaine leaves, torn; 1/4 cup chopped onions, chopped red bell pepper, and low-sodium vegetable broth
Whole grain: 1/2 whole-grain pita
Lean protein: 3 ounces cooked boneless, skinless chicken breast, diced
Plant-based fat: 2 tablespoons natural peanut butter
SASS: 1/4 teaspoon minced garlic, 1/2 teaspoon freshly grated ginger, and dash crushed pepper
On the stove top over medium heat, saute the peppers and onions in the broth until tender, and set aside. Mix the garlic, ginger, and crushed red pepper into the peanut butter, and toss the diced chicken. Fill the pita with the chicken, sauteed vegetable, chopped celery, and romaine.
