Preparing this pastelon pie for your family and friends is moderately easy and pretty fast. This dish can be prepared alongside a crisp, garden salad. All you need is a few simple items and I will assure you it will be a hit at dinner time. So if you want to impress those with some cooking skills you may want to grab a pen or pencil and pad and jot these instructions down.
2 boxes of Goya sweet plantains (the secret ingredient!)
1 large egg (beaten)
1 bag of shredded cheese *optional* (I prefer jack cheddar cheese since it gives it kick!)
A saute pan
A pie pan or cake pan
A conventional oven
Over medium heat, place one teaspoon of extra virgin olive oil until hot. Throw in the 3 table spoons of Sofrito. Saute for about 2 minutes. Add packet of sazon to the sofrito and olive oil mixture in the pan while sauteing. Stir. (Be careful. It can get hot!)
After about 3 minutes of sauteing these ingredients add your meat. Cook until meat is brown or golden brown. Add tomatoe sauce and stir until sauce is well mixed in. When the meat is thoroughly cooked turn off the heat.
Each box of sweet plantains is a separate layer in the pie. One box of the sweet plantains is for the bottom and the other is for the top. While the meat is cooling down, remove the plantain container from its packaging and place plantains in the microwave and cook for the minutes shown on the instructions on the box. You will be using one box at a time so cook them separately.
The trick to layering the sweet plantains is to mash them lightly with a fork and creating a layer of sweet plantains on the bottom of your pie pan.
After making your first layer of sweet plantains add your meat (the second layer). The third layer will be the remaining sweet plantains. You will have to mash these on a separate surface. If you mash them on the layers in your pie it may disturb the layers below.
After placing the mashed sweet plantains above the meat layer, add your cheese or if you’re skipping the cheese, just add your beaten egg. The egg will bind all three layers together and give it the final touch!
